Go, Mamma Mia with Italian Food from the Neelkanth Sarovar!
With the International borders closed, my heart sank to the pits of the ocean knowing that it would take quite a long-time before I go food blogging. Although the food scene around Lusaka is great, my taste buds craved for the authentic Italian food, delicate French pastries, and hearty Chinese cuisine. Especially, my craving for Italian food drove me insane as I sat gulping down bottles of wine that I was supposed to give to my friends. Now, I'm going to stop my melodrama and share a rad spot, where I found my Italian BAE! Neelkanth Sarovar is one of the popular hotels in Lusaka that serves authentic, Nona-made Italian food.
Neelkanth is one of the best 5 star Hotels in Zambia that offers an array of world cuisines at their uber restaurant. As an avid foodie, I loved the Aglio Olio and indulged in its creamy goodness. Try Aglio Olio at home with my secret recipe.
Ingredients
- 1 pound uncooked Fettuccine
- 6 cloves garlic, thinly sliced
- ½ cup olive oil
- ¼ teaspoon red pepper flakes, or to taste
- salt and freshly ground black pepper to taste
- ¼ cup chopped fresh Italian parsley
- 1 cup finely grated Parmigiano-Reggiano cheese
Method
- Boil water in a large pot and add a pinch or two of salt
- Put the uncooked fettuccine in the boiling water until they are al dente
- Drain the pasta and transfer it to a bowl; Reserve 1/3 of water
- In a cold skillet, add garlic and olive oil and slowly toast the garlic over medium heat
- Saute until the garlic turns golden brown
- Add in the drained fettuccine, pepper flakes, Italian herbs along with the reserved pasta water
- Add in Parmigiano cheese and stir the contents until the pasta absorbs the flavour
- Transfer it to a bowl and garnish it with cheese, pepper and seasonings
- Buon Appetito!
